Vegan Chicken & Dumplings

This Easy Vegan Chicken and Dumplings recipe is made in one pot and is the ultimate comfort food. This recipe is easy to prepare, full of flavor, and will be a hit with the whole family!

What you'll need:

Soy curls to replace the chicken!

Celery, carrots, onion, and garlic!

Homemade vegan chicken broth or store-bought.

A bit of flour for thickening our soup as well as herbs and seasonings! 

And coconut milk for creaminess.

Soak the soy curls in vegan chicken broth

Brown the soy curls in a soup pot in olive oil then remove and set aside.

Cook the vegetables then add the seasonings and flour.

Whisk in the vegan chicken stock and coconut milk then simmer for 10 minutes.

Make the dumpling dough

Add the soy curls back in

Spoon in the dumpling dough

Cover and simmer for 18 minutes!

Garnish with fresh thyme and parsley and enjoy!!
