Vegan Caesar Salad

with cashew dressing

It includes crisp romaine lettuce, homemade croutons, shredded vegan parmesan cheese, and a creamy cashew Caesar dressing.

Soak the cashews.

Add the dressing ingredients into a high-speed blender.

Blend until smooth.

Wash and dry romaine lettuce.

Add croutons, red onion, capers, vegan parm, and any desired protein.

I added crispy chickpeas!

Toss in a few tablespoons of dressing and toss to combine.

Divide into bowls and serve!
