Vegan Sweet Potato Casserole

This Vegan Sweet Potato Casserole with Marshmallows is a classic Holiday side dish that will be an absolute crowd-pleaser on the Thanksgiving table this year despite being completely dairy-free and vegan!

Sweet Potato, Maple Syrup, Vegan Butter, Plant-Based Milk, Cinnamon, and Vanilla Extract.

For the sweet potato mash:

For the Toppings: Brown Sugar, Flour, Pecans, and Vegan Marshmallows

For the toppings:

Boil the sweet potato until fork tender and add them to a food processor.

Add the remaining mash ingredients and pulse until smooth

Add the sweet potato mash to the base of a casserole dish

Mix together melted vegan butter, brown sugar, flour, and pecans and add them to the top of the mash.

Top with the vegan marshmallows

Bake for 45 minutes or until the marshmallows are melted and toasty.
