BEST Just Egg Quiche (Vegan)

This Vegan Just Egg Quiche is baked in a buttery flaky pie crust and is filled with asparagus, red bell peppers, spinach, and melted vegan cheese. It's surprisingly easy to make and absolutely delicious!

Ingredients
 

  • 1 tablespoon Olive Oil
  • ½ cup Yellow Onion finely diced
  • cup Red Bell Pepper finely diced
  • 2 Garlic Cloves
  • ¾ cup Asparagus chopped in thirds
  • 2 tablespoons Green Onion finely chopped
  • cup Spinach finely chopped
  • 1 bottle Just Egg
  • ¼ to ½ teaspoon Kosher Salt see note
  • ¼ teaspoon Black Pepper
  • ½ cup Vegan Cheese
  • 1 9" Vegan Pie Crust frozen or homemade

Instructions

  • Preheat the oven to 350F.
  • Heat a frying pan on medium-high heat and add the olive oil and sauté the onions and red bell peppers until soft and translucent, about 5 minutes.
  • Add the garlic cloves, asparagus, and green onion, and continue to cook for another 2 to 3 minutes.
  • Add the cooked veggies in to the prepared pie crust along with the finely chopped spinach.
  • Whisk together the Just Egg, salt, pepper and vegan cheese in a small bowl. Pour into the pie crust and gently mix together so the vegetables are evenly distributed.
  • Bake the quiche for 45 to 50 minutes or until the quiche is no longer jiggy in the middle and the crust edges are golden brown. Allow the quiche to cool for 5 to 10 minutes before slicing.

Notes

Salt: If the vegan cheese you are using is salty, use less salt. I found ¼ teaspoon to be a good amount. Taste the cheese and go from there. My perfect amount would be ¼ teaspoon and another small pinch. 
Important Note: Not all salts are made equal and cannot be substituted 1:1. If you are substituting table salt for kosher salt, you will need to cut the amount called for in the recipe by at least half. 
Blind Bake: This will depend on your specific homemade pie crust recipe or if you’re using frozen. Check the instructions on the pie crust you are using– if it’s longer than the bake time for this quiche, pre-bake it for about 10 to 15 minutes.
