Vegan Cream of Chicken Soup Substitute

Ingredients
 

Cashew Cream

  • 1 cup Cashews soaked
  • ½ cup Water
  • ¼ teaspoon Kosher Salt

Soup

  • ¼ cup Vegan Butter
  • ½ cup All-Purpose Flour
  • 2 cups Vegan Chicken Broth homemade or store-bought
  • 1 cup Cashew Cream
  • ½ teaspoon Dried Parsley
  • ½ teaspoon Onion Powder
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Kosher Salt see note
  • ½ teaspoon Black Pepper

Instructions

  • Bring 1 cup of water to a boil-- this is for soaking the cashews. Add the cashews in to a bowl and pour the hot water over the top. Let soak for at least 15 to 30 minutes to soften.
  • Add the soaked cashews, water, and salt to a blender and blend until smooth. It should be silky smooth to the touch and not grainy. Set aside.
  • Start on the soup by melting the vegan butter over medium heat in a medium-sized pot.
  • Whisk in the flour until no raw flour is visible. Then, slowly whisk in the vegan chicken broth, cashew cream, and seasonings.
  • Whisk continuously until thickened, about 3 to 5 minutes. You'll know it's done when it gets harder to whisk. Remove from heat. Note that it will continue to thicken as it cools.
  • Add directly to soups, casseroles, or stews- whisk to combine. If using as a base for soup, whisk water and vegan cream of chicken soup on the stovetop until warmed through and thinned out to the desired consistency

Notes

Important Note about Salt: Not all salts are made equal and cannot be substituted 1:1. If you are substituting table salt for kosher salt, you will need to cut the amount called for in the recipe by at least half.
