Fudgy Almond Butter Brownies

These Fudgy Almond Butter Brownies exceeded my expectations by miles. I knew they would taste good but I am obsessed. They are unbelievably fudgy, perfectly sweet, nutty and so dang good. If you are gluten free, make these. If you're not gluten free, make these! You won't notice the difference because you'll be too focused on how fudgy and delicious they are.

Ingredients
 

  • 2 tablespoons Ground Flaxseed mixed w/ ¼ cup water
  • ½ cup Granulated Sugar
  • cup Cocoa Powder
  • ½ cup Oat Flour
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 cup Creamy Almond Butter
  • ¼ cup Maple Syrup
  • ¼ cup Unsweet Plant Milk
  • cup Vegan Chocolate Chunks

Instructions

  • Preheat oven to 350F.
  • Whisk together the ground flaxseed with ¼ cup of water. Set aside to thicken. 
  • In a large bowl whisk together the granulated sugar, cocoa powder, oat flour, baking soda and salt. 
  • In a separate bowl whisk together the creamy almond butter, maple syrup, unsweet plant milk and the thickened flaxseed.
  • Add the dry mixture to the wet mixture and toss to combine. Stir in the chocolate chunks and then transfer to a parchment lined 8x8 baking pan. 
  • Bake for 20-25 minutes or until the brownies no longer appear wet on top. 
  • Let cool then slice and enjoy!

Notes

These brownies can be stored in an airtight container in the fridge or freezer. Simply reheat  in the oven or microwave or try them straight out of the freezer.
