Copycat Chipotle Black Beans

These Copycat Chipotle Black Beans are made quickly and easily by using canned black beans! No soaking is required and no special equipment is needed to bring the taste of Chipotle to your home.

Ingredients
 

  • 1 tablespoon Olive Oil
  • 1 Medium Yellow Onion minced
  • 3-5 Garlic Cloves minced
  • 2 Bay Leaves
  • 1 teaspoon Chili Powder
  • ½ teaspoon Smoked Paprika
  • ½ teaspoon Cumin
  • ½ teaspoon Oregano
  • ¼ teaspoon Coriander
  • ½ teaspoon Black Pepper
  • ½ teaspoon Kosher Salt
  • Pinch Cayenne Pepper
  • 2 cans Black Beans drained and rinsed
  • 2 cups Low Sodium Vegetable Broth
  • 1 tablespoons Lime Juice more to taste
  • 1 tablespoon Lemon Juice more to taste

Instructions

  • Heat the oil in a large pot over medium-high heat.
  • Mince the onion and cook until soft and starting to brown, about 5-7 minutes.
  • Mince the garlic and add to the pot and cook for another 1-2 minutes before adding the bay leaves and the remaining spices and seasonings.
  • Then, add in the drained and rinsed black beans along with vegetable broth.
  • Bring the black beans to a simmer and cover. Cook for 30 minutes. After 30 minutes, take the lid off and continue to cook for another 5 minutes. Stir in the lemon and lime juice then serve and enjoy!

Notes

Important Note: Not all salts are made equal and cannot be substituted 1:1. If you are substituting table salt for kosher salt, you will need to cut the amount called for in the recipe by at least half.
