Cilantro Lime Rice in Rice Cooker (Chipotle Copycat)

Ingredients
 

  • 2 cups Long-Grain White Rice
  • 2 cups Water see notes
  • 2 Bay Leaves
  • 1 tablespoon Avocado Oil or olive oil
  • 3-4 tablespoons Lime Juice
  • ¾ cup Cilantro finely chopped
  • 1 teaspoon Kosher Salt see note
  • ¼ teaspoon Black Pepper

Instructions

  • Thoroughly rinse the rice in a fine mesh sieve to remove excess starch. Add the rinsed and drained long-grain white rice, bay leaves, and water to the rice cooker. Secure the lid and cook according to manufacturer's instructions.
  • When the rice is finished, discard the bay leaves and fluff the rice with a fork. Stir in avocado oil, lime juice, cilantro, salt, and black pepper. I recommend adding half the amount of lime juice and salt then tasting first and adjusting to your preference.
  • Serve with Chipotle Copycat Black Beans, Chipotle Corn Salsa, Guacamole, and Pico de Gallo. Enjoy!

Notes

Important Note: Not all salts are made equal and cannot be substituted 1:1. If you are substituting table salt for kosher salt, you will need to cut the amount called for in the recipe by at least half.
