Thoroughly rinse the rice in a fine mesh sieve to remove excess starch. Add the rinsed and drained long-grain white rice, bay leaves, and water to the rice cooker. Secure the lid and cook according to manufacturer's instructions.
When the rice is finished, discard the bay leaves and fluff the rice with a fork. Stir in avocado oil, lime juice, cilantro, salt, and black pepper. I recommend adding half the amount of lime juice and salt then tasting first and adjusting to your preference.
Serve with Chipotle Copycat Black Beans, Chipotle Corn Salsa, Guacamole, and Pico de Gallo. Enjoy!
Notes
Important Note:Not all salts are made equal and cannot be substituted 1:1. If you are substituting table salt for kosher salt, you will need to cut the amount called for in the recipe by at least half.
