Potato Leek Soup

This recipe features minimal ingredients and has a remarkably creamy texture despite being made without cream!

Prepare the leeks by chipping off the tough green parts and stringy roots.

Thinly slice and wash thoroughly.

Cook the onions until soft and starting to brown.

Add the leeks and garlic.

Add the cauliflower, potatoes, seasonings, and nutritional yeast.

Pour in the vegetable broth and stir to combine.

Simmer for 30 minutes.

Use an immersion blender to purée.

Top with parsley, croutons, and red chili flakes. Enjoy!
