Vegan Smashed Potatoes

with garlic aioli

Golden and crunchy on the outside, tender and fluffy on the inside, these Vegan Smashed Potatoes are the perfect roasted side dish for the whole family.

Wash and dry potatoes.

Boil until soft and cooked through.

Drizzle some olive oil onto the prepared baking tray, then transfer the potatoes onto it.

Press down on the potatoes to smash them with a glass.

Sprinkle with olive oil, salt, and pepper.

Bake for 45 minutes or until golden and crispy. Do not flip!

Sprinkle with herbs and serve with garlic aioli.

Make the garlic aioli by adding all the ingredients into a jar or bowl.

Whisk together until smooth!

Serve as a side or appetizer with garlic aioli or dip of choice!
