Vegan Mashed Sweet Potatoes

These Vegan Mashed Sweet Potatoes are the ideal blend of sweet and buttery goodness to accompany your Thanksgiving or Christmas feast, or to enjoy during a quick weeknight dinner. With just a handful of straightforward ingredients, you can whip up this recipe in under 30 minutes!

Ingredients
 

  • 4 Large Sweet Potatoes peeled and diced
  • ¼ cup Vegan Butter
  • ¼ cup Plant-Based Milk I recommend Oat Milk
  • ¼ cup Maple Syrup
  • 1 teaspoon Kosher Salt more to taste
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Nutmeg

Instructions

  • Peel and dice the sweet potatoes.
  • Add the sweet potatoes to a large pot and fill with water. Bring to a boil and cook until soft and fork tender, about 15 minutes. Drain and return the potatoes to a pot.
  • Use a potato masher and mash the potatoes.
  • Add the vegan butter, plant-based milk, maple syrup, salt, cinnamon, and nutmeg and continue to mash until completely smooth. NOTE: If you want your mashed sweet potatoes to be less sweet, add half the amount of maple syrup.
  • Optional: Use an immersion blender to get the potatoes extra smooth.
  • Taste and adjust the sweetness and salt to your preference.

Notes

Important Note about Salt: Not all salts are made equal and cannot be substituted 1:1. If you are substituting table salt for kosher salt, you will need to cut the amount called for in the recipe by at least half. 
Storage: Store cooled leftover in an airtight container in the refrigerator for up to 5 days.
Reheat: Add the portion of mashed potatoes you'd like to reheat to a pot over medium-low heat. Add a splash of plant-based milk to loosen it up as needed. Alternatively, you can use the microwave. Heat for 1-2 minutes until hot.
