Dessert for breakfast! These Cookie Dough Overnight Oats are rich, decadent, and creamy. With just a few simple ingredients and 5 minutes of prep time, you can have an irresistibly delicious breakfast ready to go!
Add the old-fashioned oats, plant-based milk, yogurt, chia seeds, brown sugar, cinnamon, and a pinch of salt to a jar. Stir well to combine.
Toss in the chocolate chips.
Cover and refrigerate overnight or for at least 3-4 hours.
Combine the oat flour, maple syrup, and peanut butter until it forms a cookie dough. If the mixture is dry, add a teaspoon of plant-based milk.
Add a few tablespoons of chocolate chips and roll into small balls. Refrigerate until ready to serve.
Please note— if you aren't adding the cookie dough bites, I recommend stirring in a spoonful of nut butter to the overnight oats. This is helpful in making it taste more rich and buttery like a cookie!
Next day, stir in or top the overnight oats with cookie dough bites and enjoy!
