Oatmeal Cookie Dough Bites

Ingredients
 

  • 2 cups Old-Fashioned Oats pulsed into a flour
  • ½ cup Finely Chopped Pecans or other nuts
  • ½ cup Chopped Vegan Chocolate see note
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Kosher Salt
  • ½ cup Creamy Peanut Butter
  • ½ cup Maple Syrup

Instructions

  • Place the old-fashioned oats in a blender or food processor and blend until they turn into a flour.
  • Add the oat flour into a large bowl and stir in chopped pecans, chopped chocolate, cinnamon, and salt.
  • Add the maple syrup and peanut butter, then stir until well combined. The mixture will be thick, so use clean hands to fully mix it together.
  • If your nut butter is too thick, the mixture may turn out dry. If that happens, simply add plant-based milk (a teaspoon at a time) to loosen it up.
  • Use a small cookie scoop to portion the mixture into evenly sized balls. You should get about 20-24. About 2 tablespoons per ball.
  • Store in an airtight container in the fridge and enjoy!

Notes

Mini chocolate chips and chopped chocolate work best. If you're using regular-sized chips or chunks, be sure to chop them up first or else the cookie dough bites will be crumbly.
If your mixture feels too dry, add a little splash of plant-based milk to help bind it together. This can happen if your peanut butter is too thick.
If it's too wet, add extra oats or refrigerate for 30 minutes to an hour before enjoying.
