Overnight Oats with Frozen Fruit

These Overnight Oats with Frozen Fruit are creamy, filling, and perfect for an easy make-ahead breakfast. Made with rolled oats, plant-based milk, and frozen berries, the oats soak overnight and turn into a thick, creamy breakfast you can enjoy straight from the fridge or warmed up.

Ingredients
 

  • ½ cup Old-Fashioned Oats
  • 1 tablespoon Chia Seeds
  • ¼ cup Vegan Yogurt Unsweetened
  • 1 tablespoon Maple Syrup
  • ½ teaspoon Vanilla Extract optional
  • Pinch of Kosher Salt
  • ½ cup Plant-Based Milk unsweetened
  • cup Frozen Berries or other fruit

Instructions

  • Add the old-fashioned oats, chia seeds, vegan yogurt, maple syrup, vanilla extract (if using), and a pinch of salt into a jar with a lid.
  • Stir to combine, then pour in the plant-based milk and stir again until everything is well mixed.
  • Top the mixture with the frozen fruit. Do not stir.
  • Seal the jar tightly and place it in the fridge overnight, or for at least 6 hours.
  • The next morning, remove the lid and give the oats a good stir to incorporate the thawed fruit.
  • Add any desired toppings and enjoy!

Notes

This recipe makes 2 small servings or 1 large serving.
