Make homemade Blueberry Simple Syrup in just 15 minutes with a few easy ingredients! This syrup is perfect for vegan coffee drinks, lattes, iced teas, lemonades, or sparkling water. Stir it into a refreshing iced blueberry latte or mix it into sparkling water for bright, summery flavor in every sip.
Combine the blueberries, organic cane sugar, and water in a pan.
Bring the mixture to a slight boil then immediately reduce to a simmer over medium-low heat for 5 minutes.
Then, use a potato masher or back of spoon to mash the blueberries. Continue to simmer for 7-8 minutes.
Place a fine-mesh strainer over a bowl or measuring cup, then pour the syrup through it. Don't throw away the strained blueberries! Use it as a jam to spread on pancakes or toast.
Allow the syrup to cool completely before transferring it to an airtight jar and store in the fridge for up to 2 weeks.

This recipes makes roughly 1 ¼ cup of simple syrup.Avoid boiling the syrup. Bring it to a slight boil then immediately reduce to a simmer over medium to prevent it from burning and/or thickening too fast.
