If you're needing to change up your coffee routine, try this blueberry flavored latte.
I know the combination of fruit and coffee seems a bit unconventional but trust me, it's delicious.
For the blueberry syrup, you only need 3 ingredients and 15 minutes.
It's made with blueberries, sugar, and water and can be used for a variety of different drinks.
For the latte, you'll need a double shot of espresso, oat milk, and a few tablespoons of blueberry syrup.

Ingredients
Blueberry and espresso might sound unusual, but the fruity sweetness of blueberries actually compliments the rich, bold flavors of the coffee perfectly!
Make the blueberry syrup ahead of time and you can have blueberry flavored coffee all week long.
Espresso: A latte is a made up of one or two shots of espresso and milk. I use a Nespresso.
Oat Milk: Oat milk is a creamy, slightly sweet plant-based milk that froths well for lattes. It's my go-to but I oftentimes use soy or almond milk as well.
Blueberry Simple Syrup: While blueberries and coffee may sound unusual, the combination is surprisingly delicious and refreshing.
The homemade blueberry syrup is made up of only three ingredients including fresh blueberries, organic cane sugar, and water.

Helpful Equipment
This oat milk blueberry latte is made with espresso so you will need an espresso machine.
I have a Nespresso and LOVE it.
Highly recommend getting one if you're trying to make espresso shots in the comfort of your own home but don't want to drop $1000 on a espresso machine.
If you want to froth your milk, I recommend and use an Aeroccino. The aeroccino froths milk hot and cold.
How to Make This Recipe

Step 1: Combine the blueberries, raw cane sugar, and water in a pan, and stir to mix everything together.
Step 2: Bring the mixture to a slight boil then immediately reduce to a simmer over medium heat for 5 minutes. Then, use a potato masher or back of spoon to mash the blueberries. Continue to simmer for 10 minutes.
Step 3: Place a fine-mesh strainer over a bowl or measuring cup, then pour the syrup through it.
Step 4: Allow to cool.
Step 5: Add 1-2 tablespoons of blueberry simple syrup to the bottom of a tall glass.
Step 6: Fill with ice and pour in the oat milk.
Step 7: Brew a double shot of espresso and pour over the oat milk. Stir and taste to adjust sweetness and flavor.
Note: Let the syrup cool completely before storing it in an airtight jar in the fridge for up to 2 weeks. Use in tea, lemonade, cocktails, and more!
Substitutions & Variations
Coffee shops are great but making coffee at home offers its advantages!
You can change it to fit your preferences by adjusting the sweetness and creaminess to your exact liking.
And, it's more cost-effective!
Espresso: If you don't have an espresso machine, you can replace the double shot of espresso with ½ cup of strong coffee or cold brew. Adjust the amount of milk accordingly.
Oat Milk: Feel free to choose your preferred plant-based milk!
Blueberry Syrup: Try this Iced Cinnamon Dolce Latte, Caramel Oat Milk Latte, Strawberry Latte, or Iced Mocha instead!
Tips & Tricks
Adjust sweetness to preference. Typically, a simple syrup is a 1:1 ratio of water to sugar. I opted for ½ cup to 1 cup of water— you can reduce or increase the sugar depending on how sweet you want the syrup to be.
And I'd recommend using an unsweetened oat milk to be completely in control of the sweetness.
Avoid boiling too vigorously, as this can cause the syrup to thicken too much or it might burn.
As the blueberries simmer, mash them with the back of a spoon or a potato masher to release more juice and intensify the flavor.
Use medium or dark roast. I usually opt for a stronger espresso to create a contrast with the sweet blueberries and creamy milk. Darker roasted beans also tend to be less acidic, resulting in a smoother latte.
Storage
Store leftover simple syrup in an airtight jar in the fridge for up to 2 weeks or freeze for up to 2 month.
Brewed espresso should be enjoyed immediately.

Almond milk is more nutty and often times a little thinner whereas soy milk and oat milk is thick and creamy. They are great dairy-free options!

- ½ cup Oat Milk or other plant-based milk
- Double Shot of Espresso
