Iced Blueberry Latte

Ingredients
 

Blueberry Simple Syrup

  • 2 cups Fresh Blueberries or frozen
  • 1 cup Water
  • 1 cup Organic Cane Sugar

Blueberry Latte

  • 1-2 tablespoons Blueberry Simple Syrup more to preference
  • Ice Cubes
  • ½ cup Oat Milk or other plant-based milk
  • Double Shot of Espresso

Instructions

  • Combine the blueberries, raw cane sugar, and water in a pan, and stir to mix everything together.
  • Bring the mixture to a slight boil then immediately reduce to a simmer over medium-low heat for 5 minutes. Then, use a potato masher or back of spoon to mash the blueberries. Continue to simmer for 7-8 minutes.
  • Place a fine-mesh strainer over a bowl or measuring cup, then pour the syrup through it. Allow the syrup to cool to room temperature.
  • Add 1-2 tablespoons of blueberry simple syrup to the bottom of a tall glass.
  • Fill with ice and pour in the oat milk.
  • Brew a double shot of espresso and pour over the oat milk. Stir and taste to adjust sweetness and flavor.
  • If making a hot blueberry latte, froth and steam the milk and omit the ice.

Notes

Allow the syrup to cool completely before transferring it to an airtight jar and store in the fridge for up to 2 weeks.
 
This recipes makes roughly 1 ¼ cup of simple syrup.
