Substitutions & Variations
Berries: While this recipe highlights blueberries, you can also experiment with other fruits. For a strawberry flavored syrup, try my Strawberry Simple Syrup, or for a sweet, cozy cinnamon banana bread flavor, try Banana Simple Syrup!
Spices: Try adding a few slices of fresh ginger or a pinch of cinnamon while simmering for a warm, aromatic note. This works especially well if you're stirring the syrup into hot teas.
Citrus: A squeeze of lemon or orange can enhance the berry flavor and balance the sweetness, making the syrup taste even fresher.
Herbs: Fresh mint or basil pairs nicely with blueberries and can add a subtle herbal flavor to drinks, desserts, or fruit-forward beverages.
Serving Ideas
This syrup is versatile and can be used in a variety of ways:
- Blueberry Lattes: Stir into hot or iced lattes for a fruity flavor, like in an Iced Blueberry Latte.
- Coffee & Cold Brew: Sweeten your favorite brewed coffee or cold brew with a splash of blueberry syrup.
- Matcha & Tea: Add a touch of sweetness to matcha lattes or teas for a blueberry flavor.
- Sparkling Drinks: Mix with sparkling water or seltzer for a simple homemade blueberry soda.
- Cocktails & Mocktails: Use it to flavor fruity cocktails, spritzers, or non-alcoholic mocktails.
- Drizzle Over Sweets: If using the syrup on food, leave the blueberry chunks unstrained. It's delicious over vegan pancakes, waffles, or oatmeal.
- Add to Oats: Stir into overnight oats or oat milk chia pudding for extra blueberry flavor and natural sweetness.

Tips & Tricks
Fresh blueberries will give you the best flavor but frozen berries can be used as well.
Avoid boiling too vigorously, as this can cause the syrup to thicken too much or it might burn.
As the blueberries simmer, mash them with the back of a spoon or a potato masher to release more juice and intensify the flavor.
Strain the syrup through a fine mesh sieve or cheesecloth to remove the pulp and seeds, leaving you with a smooth syrup.
Don't throw away the strained blueberries! Use it as a jam to spread on pancakes or toast.
A splash of lemon juice can brighten the flavor and balance the sweetness of the syrup. Would avoid this if using for coffee.
Storage
Store: Allow the simple syrup to cool completely then store in the refrigerator in an airtight container for up to 2 weeks.
Freeze: You can freeze this syrup for up to two months. I recommend freezing it in a silicon ice tray so you can use what you want and keep the rest frozen for later.
