I’ve been wanting to make a blueberry syrup for coffee for a long time and I needed to hurry before summer ended!
One of my favorite lattes I've made is my Strawberry Iced Latte so why not try blueberry?

It comes together in 15 minutes and you only need 3-ingredients!

Making this blueberry syrup is so easy!
All you need are three basic ingredients: blueberries, sugar, and water.
Once your syrup is ready, make this Iced Blueberry Latte!
Blueberries: This simple syrup is flavored with blueberries. Fresh is ideal, but frozen works just as well!
Organic Cane Sugar and Water: Simple syrup is usually made with equal parts water and sugar, simmered until the sugar dissolves. For this blueberry syrup, however, I chose to use ½ cup of sugar to 1 cup of water. If you'd like a sweeter syrup, you can increase the sugar to 1 cup.
I used Florida Crystals Raw Cane Sugar.

Helpful Equipment
This blueberry simple syrup comes together with only a pan, spatula, potato masher, and a fine mesh strainer.
The strainer serves the purpose of separating the blueberry chunks from the simple syrup.
For a blueberry purée, simply let the mixture cool, then transfer it to a blender and blend until smooth.

Step 1: Combine the blueberries, raw cane sugar, and water in a pan, and stir to mix everything together.
Step 2: Bring the mixture to a slight boil then immediately reduce to a simmer over medium heat for 5 minutes.
Step 3: Then, use a potato masher or back of spoon to mash the blueberries. Continue to simmer for 10 minutes.
Step 4: Place a fine-mesh strainer over a bowl or measuring cup, then pour the syrup through it.
Step 5: Use in coffees, tea, lemonade, club soda, cocktails, and more.
Note: Allow the syrup to cool completely before transferring it to an airtight jar and store in the fridge.
Substitutions & Variations
Blueberries: You can replace the blueberries with raspberries, strawberries, or blackberries. Try this strawberry simple syrup instead!
Lemon: A small squeeze of lemon or lemon zest can add some brightness. I wouldn't add this if you are planning on making blueberry iced coffee but for lemonades, teas, and cocktails— it would be great!
Herbs: Depending on what you are using it for— basil or mint would be delicious!

Although I originally made this homemade blueberry simple syrup for blueberry lattes, its versatility goes far beyond just coffee and cocktails.
Try it in the following:
Add to coffee: Stir some blueberry syrup into your morning coffee or try this blueberry latte. This is my favorite way to use it!
Flavoring for water: Add it to sparkling water to make a blueberry soda.
Add to cocktails: Use it in your favorite cocktails for a fruity twist. It works well in drinks like blueberry margaritas, mojitos, or a vodka soda.
Iced tea and lemonade: Add it to iced tea or lemonade for a fun twist. Some added mint or basil would be delicious, too!
Drizzle over sweets: If using to drizzle over food, I would avoid straining it and leaving the blueberry chunks. It would be good over pancakes, waffles, or oatmeal.
Add it to oats: Add it to overnight oats or chia pudding to add a blueberry flavor and additional sweetness.
Tips & Tricks
Fresh blueberries will give you the best flavor but frozen berries can be used as well.
Adjust sweetness to preference. Typically, a simple syrup is a 1:1 ratio of water to sugar. I opted for ½ cup to 1 cup of water because my blueberries were sweet— you can reduce or increase the sugar depending on how sweet you want the syrup to be.
Avoid boiling too vigorously, as this can cause the syrup to thicken too much or it might burn.
As the blueberries simmer, mash them with the back of a spoon or a potato masher to release more juice and intensify the flavor.
Strain the syrup through a fine mesh sieve or cheesecloth to remove the pulp and seeds, leaving you with a smooth syrup.
Don't throw away the strained blueberries! Use it as a jam to spread on pancakes or toast.
A splash of lemon juice can brighten the flavor and balance the sweetness of the syrup. Would avoid this if using for coffee.
Storage
Store: Allow the simple syrup to cool completely then store in the refrigerator in an airtight container for up to 2 weeks.
Freeze: You can freeze this syrup for up to two months. I recommend freezing it in a silicon ice tray so you can use what you want and keep the rest frozen for later.
