This Starbucks copycat cinnamon dolce latte is indulgent but making it at home ensures it’s made using simple ingredients and you can control the sweetness and creaminess.
It's made with a double shot of espresso, oat milk, and cinnamon dolce syrup.

Ingredients
This cinnamon dolce latte is easy to make with simple ingredients you likely already have at home. Feel free to enjoy it hot or iced.
Espresso: A latte is a made up of one or two shots of espresso and steamed milk. I use a Nespresso machine to get perfectly brewed espresso shots in minutes.
Oat Milk: I oftentimes use oat milk or almond milk but feel free to use any variety of plant-based milk. But I would recommend using unsweetened to ensure you can control the sweetness.
Cinnamon Dolce Syrup: This vegan cinnamon simple syrup is made up of brown sugar, water, cinnamon sticks, and vanilla.

I have a Nespresso and absolutely LOVE it. It brews perfect espresso shots in minutes. If you're a coffee lover, you gotta get one.
I use the double espresso vertuo pods.
If you want to froth your milk, I recommend and use an Aeroccino. The aeroccino froths milk hot and cold.

Step 1: Add the brown sugar, cinnamon sticks, and vanilla paste in a small pan.
Step 2: Whisk in the water.
Step 3: Bring to a slight boil then quickly reduce the heat to medium to reach a simmer, whisk occasionally until the sugar completely dissolves, approximately 5 minutes. Take it off the heat and let it cool.
Step 4: Add cinnamon dolce syrup to the bottom of a tall glass.
Step 5: Fill with ice and pour in the oat milk.
Step 6: Brew a double shot of espresso and pour over the oat milk. Stir and taste to adjust sweetness.
Mix together a teaspoon of brown sugar and cinnamon then sprinkle a little on top. Enjoy!
The Starbucks version is topped with whipped cream. If you'd like to add whipped cream, I recommend using Coconut Whipped Cream!
It would be a delicious addition to this cinnamon latte.
Note: Let the syrup cool entirely at room temperature before incorporating it into iced beverages. While it can be promptly mixed into a hot drink, allowing it to cool before pouring it over ice will help avoid crystallization.
Substitutions & Variations
A great thing about making coffee at home is being able to make it just how you like it– adjusting the sweetness and creaminess to suit your preference.
It's also much more cost-effective!
Espresso: If you don't have an espresso machine, you can substitute the double shot of espresso with ½ cup strong coffee. Adjust the milk as needed, you might need less.
Oat Milk: I prefer oat milk, but feel free to choose your favorite among almond milk, cashew milk, and soy milk.
Cinnamon Sticks: You can use ground cinnamon but it does leave a bit of texture that will settle at the bottom of the latte. I would use ½ teaspoon ground cinnamon then strain the syrup through a nut milk bag.
Vanilla Paste: Extract works great, too. Alternatively, you can use an unsweetened vanilla flavored non-dairy milk.
Storage
Store leftover cinnamon simple syrup in an airtight jar in the fridge for up to 2 weeks.
Tips & Tricks
Simmer the syrup gently, do not boil. Bring the syrup to a slight boil and then immediately reduce to a simmer. You don't want this to be a thick caramel-like consistency. It should be simmered until the sugar has melted, no more than 5 minutes.
Allow the syrup to cool completely at room temperature before using it for iced drinks. It can be immediately added to a hot drink but allowing it to cool before adding it over ice will prevent it from crystallizing.
Use an unsweetened oat milk so you can be completely in control of the sweetness.
