These no-bake vegan cookie dough bites are made with simple ingredients like rolled oats, peanut butter, and maple syrup.
They’ve become a staple in my weekly meal prep because they’re easy to make and absolutely delicious.
Perfect as a midday snack or a sweet treat after dinner!
Old-Fashioned Oats: No need to buy oat flour, just pulse rolled oats in a blender or food processor until you've made flour!
Peanut Butter: I use peanut butter because it's the most affordable option but almond butter, cashew butter, or sunbutter will also work. But keep in mind, you want it to be runny and not stiff.
Maple Syrup: Adds sweetness but also moisture.
Cinnamon and Salt: For flavor and to balance the sweetness. Vanilla is great, too!
Chopped Nuts: Pecans are a great addition for added crunch. You can use walnuts, cashews, or almonds as well. Just make sure they are chopped into small pieces.
Vegan Chocolate: Mini chocolate chips and chopped chocolate work best. If you're using regular-sized chips or chunks, be sure to chop them up first or else the cookie dough bites will be crumbly.

Step 2: Stir in chopped pecans, chopped chocolate, cinnamon, and salt.
Step 3: Add the maple syrup and peanut butter, then stir until well combined.
Step 4: The mixture will be thick, so use clean hands to fully mix it together.
Step 5: Use a small cookie scoop to portion the mixture into evenly sized balls. You should get about 20-24. About 2 tablespoons per ball.
Note: If your nut butter is too thick, the mixture may turn out dry. If that happens, simply add plant-based milk (a teaspoon at a time) to loosen it up.

Peanut Butter: If you have a peanut butter allergy, you can use sunflower butter, almond butter, or cashew butter.
Pecans: I've made these with chopped walnuts, cashews, or almonds. If you're nut-free, add sunflower seeds or pumpkin seeds (or leave it out all-together, maybe through in some whole old-fashioned oats instead!)
Chocolate Chips: You can leave the chocolate chips out entirely or add raisins to make these take like oatmeal raisin cookie dough.
Tips & Tricks
If your mixture feels too dry, add a little splash of plant-based milk to help bind it together. This can happen if your peanut butter is too thick.
If it's too wet, add extra oats or refrigerate for 30 minutes to an hour before enjoying.
Feel free to swap in different mix-ins like dried fruit, seeds, or other nuts. Just make sure everything is chopped.
Storage
Store: These edible cookie dough bites will stay fresh in an airtight container in the fridge for about 1-2 weeks. As they sit, they may become a bit crumblier as they dry out, but they'll still be just as delicious.
