Starbucks just announced their new fall drinks for the fall season and they all sound so delicious. In this recipe, we are recreating the new Iced Apple Crisp Oatmilk Shaken Espresso with spiced apple drizzle, blonde roast, and cinnamon.
I always see people complaining that they spend so much on expensive coffee drinks from coffee shops including Starbucks because they taste better. Well, not anymore!
With this copycat recipe, you can say goodbye to expensive Starbucks runs and say hello to delicious coffee in the comfort of your own home!
You can adjust the sweetness and the creaminess, and you can use your favorite espresso!

What is a Shaken Espresso?
A shaken espresso is a method of making iced espresso drinks where you brew espresso, pour over ice, add a sweetener of choice then shake vigorously until foamy.
In this recipe, I used apple brown sugar syrup. But pumpkin spice syrup would be great as well!
Starbucks most popular drink prepared this way is the iced brown sugar oatmilk shaken espresso.
Is the Starbucks Apple Crisp Syrup Vegan?
Both the apple syrup and drizzle are vegan-friendly. When the drink is made with non-dairy milk it is vegan!
Starbucks describes the drink as layered flavors of apple, cinnamon, oat, and brown sugar. It consists of creamy oat milk, cinnamon apple drizzle, and blonde espresso.
This fall they have the fan favorite Apple Crisp Oatmilk Macchiato returning. But have added the Apple Crisp Oatmilk Shaken Espresso as a new fall drink.
If you don't want to make the trip or spend the money, try making both at home!
Ingredients
Fall flavors are my favorite! Apple, brown sugar, and cinnamon are the ultimate combo and create such a fun yet cozy drink.
This homemade apple syrup is made with brown sugar, apple juice concentrate, and hints of cinnamon. It's easy, warming, and so comforting!
Brown Sugar: Brown sugar gives this syrup a caramelized sweet flavor.
Apple Juice: Using apple juice isn't of water will create a strong apple flavor which is key for this apple brown sugar syrup.
Applesauce: Applesauce adds even more apple flavor. It can be omitted but it's recommended for the best flavor.
Cinnamon: Cinnamon is a must!
Double Espresso: You'll need a double shot of espresso for this recipe. Starbucks uses a blonde shot for their version. I recommend the Double Espresso Dolce if you have a Nespresso machine. I used a dark and bold pod for this recipe because I love a dark roast but that isn't recommended if you want it to be like the Starbucks version.
Oatmilk: I recommend Oatly Barista Blend or Chobani Oat Milk Barista Blend. If you aren't a fan of oat milk, you can use any non-dairy milk you enjoy. I often get almond milk or soy milk.
Helpful Equipment
Notes of apple, caramelized brown sugar, and cinnamon create the most perfect spiced fall drink!
Here's what you need to make it:
An espresso machine is very important when making this recipe.
I use a Nespresso Vertuo Machine and I am in love with it. It makes perfect espresso shots in seconds!
But any espresso machine will work.
Alternatively, you can use ½ cup of store-bought cold brew instead. Cooled-down coffee could work but it won't be as strong in flavor.
The added applesauce gives the apple syrup a bit of texture so if that bothers you, strain it after simmering or use an immersion blender and purée it to be a smoother texture.
You will also want to grab a jar with a tightly sealed lid.
I recently purchased these jars and I am obsessed. They are originally intended for overnight oats or to take food on the go but have a tight seal and work well for this shaken espresso.
How to Make This Recipe

Step 1: Whisk together the brown sugar, apple juice, applesauce, cinnamon, and vanilla extract in a small pot. Bring to a simmer over medium heat, and cook for about 2-3 minutes.
Step 2: Add two tablespoons of apple brown sugar syrup to a jar that has a lid.
Step 3: Add in the espresso.
Step 4: Add ice and shake vigorously until nice and foamy.
Step 5: Pour into a glass and ice.
Step 6: Top off with oat milk.
Substitutions
The best part of making coffee at home is that you get to create the perfect drink for you including the sweetness and creaminess.
Espresso: You can try using store-bought cold brew or strongly brewed iced coffee. Note that it won't taste exactly the same but it will still be delicious!
Apple Juice: I used 100% pure apple juice. Avoid the ones with added sugar.
Brown sugar: Dark brown sugar is best but light brown sugar or coconut sugar will work just fine.
Can I make sugar-free apple spice syrup? I haven’t attempted to make this particular recipe sugar-free but I would recommend using Swerve’s Brown Sugar or Truvia’s Brown Sugar.

Tips & Tricks
This apple crisp shaken espresso is the ultimate fall drink!
Starbucks uses their classic starbucks blonde espresso. I use Double Espresso pods from Nespresso for this recipe because it's my favorite but feel free to use your favorite espresso!
Allow the syrup to cool completely at room temperature before transferring it to the fridge. This will prevent it from crystallizing. It can be immediately added to a hot drink but please allow it to cool to room temperature before adding it to iced drinks.
The syrup will continue to thicken as it cools so keep an eye on it, don’t allow the mixture to boil, and remove as soon as it has slightly thickened and the sugar has dissolved. This syrup is made with applesauce and cinnamon so it is a little thicker than traditional simple syrup but it shouldn't be as thick as caramel.
Storage
This brown sugar apple syrup can be stored in an airtight container for up to 1 week.
Prepared shaken espresso should be served immediately for best results.

Starbucks Iced Apple Crisp Oatmilk Shaken Espresso
Ingredients
Apple Brown Sugar Syrup:
- ½ cup Brown Sugar
- ¾ cup Apple Juice
- 3 tablespoons Applesauce unsweetened
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla Extract optional
Oatmilk Shaken Espresso:
- Ice
- Double Espresso Shot
- 2 tablespoons Apple Brown Sugar Syrup
- ½ cup Oatmilk unsweetened
Instructions
- Whisk together the brown sugar, apple juice, applesauce, cinnamon, and vanilla extract in a small pot.
- Bring to a simmer over medium heat, and cook for about 2-3 minutes or until the sugar is dissolved and the syrup slightly thickens. Remove from heat and pour into a jar to cool.
- Fill a lidded jar halfway with ice and pour in the double espresso shot and 2 tablespoons of the apple brown sugar syrup. Screw on the lid and vigorously shake for at least a minute or until the jar looks full of foam.
- Fill a serving glass halfway with ice and pour in the shaken espresso. Top with enough oatmilk to fill the glass and enjoy!
