What are Overnight Oats?
Overnight oats are a simple no-cook method to make oatmeal.
Instead of cooking on the stovetop or using a microwave, you simply soak the oats in milk overnight.
This soaking method lets the oats absorb the liquid, giving them that creamy texture.
Ingredients
All you need to make these coffee overnight oats is a handful of ingredients including old-fashioned oats, oat milk, espresso, and cinnamon.
Old-Fashioned Oats: I highly recommend using Old Fashioned Oats also known as rolled oats, not quick oats. Quick oats will be thinner and have a mushy consistency which is not ideal.
Oat Milk: Oat milk is creamy and thick so it's my favorite to use. I recommend using unsweetened plant-based milk.
Espresso: I used two tablespoons of bold espresso. But two tablespoons of strong brewed coffee or cold brew will work just as well.
Chia Seeds: Chia seeds help thicken the overnight oats. You can use ground flax as well.
Almond Butter: Almond butter adds creaminess but also flavor. You can use peanut butter or cashew butter as well. The type of nut butter you use will impact the flavor slightly.
Maple Syrup: Pure maple syrup is best to add a bit of sweetness.
Cinnamon: Cinnamon adds a nice flavor but it's completely optional. Vanilla would be great as well.
Chocolate Chips: Adding vegan chocolate chips kind of makes these coffee oats more of a mocha but it's such an incredible combination so I couldn't resist adding a couple.

I have a Nespresso and absolutely LOVE it. It brews perfect espresso shots in minutes with no hassle. If you're a coffee lover, you gotta get one.
I recommend buying a few jars with lids so you can prep your overnight oats in advance to have them on hand for a few days.
I recommend either 8-ounce jars or 16-ounce jars.
This mason jar comes with a spoon and it's my absolute favorite way to prep overnight oats in.
How to Make This Recipe
These delicious overnight oats are made for coffee lovers!
Simple ingredients are whipped up to create a sweet and creamy breakfast that will satisfy that coffee craving and fill you up until lunch.

Step 1: Add the old-fashioned oats, chia seeds, chocolate chips cinnamon, and salt to a jar or container with a lid and stir together.
Step 2: Stir in the oat milk, espresso, almond butter, maple syrup until well combined.
Step 3: Seal the lid of the jar or container and place it in the refrigerator and let it sit overnight.
Step 4: Next day, add any toppings you love and enjoy! I topped mine with shaved chocolate and a dollop of plant-based yogurt.
Alternatively, you can refrigerate it for at least 3-4 hours but leaving it overnight yields the best results.
Note: Drizzle some vegan caramel over the top to make a caramel latte inspired breakfast.
Substitutions & Variations
Make it gluten-free: Make sure you are buying certified gluten-free oats and certified gluten-free oat milk.
Old-Fashioned Oats: Quick oats will be thinner and have a mushy consistency. Look for rolled oats or old-fashioned oats.
Espresso: If you don't have an espresso machine, don't worry. You can use two tablespoons of strong brewed coffee or cold brew.
Oat Milk: Oat milk is my personal favorite but almond milk, cashew milk, and coconut milk will work as well.
Almond Butter: You can substitute this for any nut butter or seed butter.
Chia Seeds: If you don't enjoy chia seeds, you can substitute it with ground flaxseeds. Do not use whole flaxseeds. It has to be ground.
Pure Maple Syrup: Agave syrup is the best substitute for maple syrup.
Topping Ideas
Keep it simple with chocolate shavings and a dollop of yogurt or get creative.
Caramel Drizzle: A vegan caramel drizzle would be incredible drizzled over the the top of these oats. Caramel latte oats? Yes please!
Caramelized Bananas: Sauté banana slices in a little butter and brown sugar until caramelized.
Fresh Fruit: Add a burst of freshness and natural sweetness with sliced bananas or fresh strawberries.
Nuts: Toasted nuts such as almonds, walnuts, pecans, or cashews would be tasty.
Yogurt: A dollop of vegan yogurt adds creaminess and a tangy contrast.
Nut Butter: Drizzle some almond butter, peanut butter, or cashew butter for a creamy, nutty flavor.
Granola: Top your oats with a small handful of granola for extra crunch!
Storage

Store your overnight oats in an airtight jar or airtight container in the fridge for up to 5 days.
Tips & Tricks
Use the appropriate jar: An 8oz jar will be filled to the top with oats and the toppings will overflow a bit so the jar won't close whereas a 16oz jar will allow room for toppings and the lid to close. The 16oz jar is preferred if you're taking the oats on the go.
Don’t Skip the Chia Seeds: The chia seeds create a thick, creamy texture. If you don’t have chia seeds, use ground flaxseeds instead.
Salt your oats! Salt helps balance and bring out the flavors and won't make your oatmeal salty.
