Tahini: Tahini has a distinctive nutty flavor. Tahini can sometimes taste bitter due to a few reasons. It can be from the type of sesame seeds used, their roasting level, or the presence of the seed's outer hull during processing. Choosing high-quality tahini and experimenting with different brands can help you find a version with a milder taste.
Plant-Based Milk: This adds more creaminess and helps the herb sauce to blend.
Olive Oil: Extra-virgin olive oil provides the best flavor.
Lemon Juice: Lemon juice adds a bright flavor that tones down the earthy tahini.
Garlic Powder: I prefer garlic powder in this recipe since raw garlic can sometimes be overpowering. But if you'd prefer, you can use 1 garlic clove instead.
Herbs: A mix of cilantro, parsley, and green onions are added to this sauce to provide a lot of herb flavor.

Step 1: Add the tahini, plant-based milk, olive oil, lemon juice, garlic powder, kosher salt, and black pepper to a blender.
Step 2: Add in the chopped kale, parsley, cilantro, green onions, and 2 tablespoons of water.
Step 3: Blend until smooth. To thin it out or help with blending, add the remaining 2 tablespoons of water. Taste and adjust the salt, black pepper, and lemon juice to your preference.
Step 4: Serve on salads, sandwiches, wraps, or grain bowls. Enjoy!
Note: If the tahini is too bitter for your preference, balance it out with 1-2 teaspoons of maple syrup. High-quality tahini has a milder, more palatable flavor.

Tahini: This is a tahini based dressing so I don't recommend substituting it without completely changing the flavor. But make sure you use a high-quality tahini that you enjoy the flavor of.
Extra-Virgin Olive Oil: Extra-virgin olive oil will bring the most flavor but you can use regular olive oil, sunflower oil, or avocado oil as well. But the flavor will be altered.
Plant-Based Milk: You can use water instead of try non-dairy unsweetened yogurt.
Garlic Powder: Use 1 garlic clove instead. It can sometimes be overpowering so don't go overboard with fresh garlic.
Kale: Spinach works as well.
Herbs: Feel free to switch it up! Dill and chives would be great.
