Ingredients
This brown sugar latte doesn't require anything special. In fact, you probably already have all the ingredients at home!
It can be made hot and iced.
Brown Sugar: Simple syrup is a 1:1 ratio of sugar and water. For this oat milk latte, we are using 1 cup brown sugar to 1 cup water.
Espresso: A latte is a made up of one or two shots of espresso and steamed milk. But if you're making yours iced, no need to steam the milk. Frothing is optional. For this recipe, you'll need a double shot of espresso.
Vanilla: Pairs well with the caramelized flavor of brown sugar. It's highly recommended but optional.
Oat Milk: I prefer oat milk when making lattes at home because it's creamy. But other plant-based milks work as well, such as almond or soy.
Ice Cubes: Only needed if you're making this iced. If you're making your latte hot, steam the milk and omit the ice.

If you want to froth your milk, I recommend and use an Aeroccino. The aeroccino froths milk hot and cold.

This oat milk latte with brown sugar syrup will change your mind about having coffee at home.

Step 1: Add the brown sugar, water, vanilla extract, and pinch of salt to a pan and whisk to combine.
Step 2: Bring to a slight boil and then immediately reduce to a simmer over medium heat. Whisk occasionally until the sugar completely dissolves, approximately 5 minutes. Allow to cool.
Step 3: Add brown sugar syrup to the bottom of a drinking glass and fill with ice cubes.
Step 4: Pour in the milk. If making a hot latte, steam the milk and omit the ice.
Step 5: Brew a double shot of espresso and pour in the glass over the milk.
Stir and taste to adjust sweetness.
Note: Allow the syrup to cool completely at room temperature before using it for iced drinks. It can be immediately added to a hot drink but allowing it to cool before adding it over ice will prevent it from crystallizing.
Substitutions & Variations
Brown Sugar: You can substitute organic cane sugar and add vanilla if you'd like to make a vanilla simple syrup.
Espresso: If you don't have an espresso machine, you can substitute the double shot of espresso with ½ cup strong coffee. Adjust the milk as needed.
Oat Milk: Oat milk is my favorite because it is super creamy but almond milk, cashew milk, and soy milk are great substitutes. Use your favorite plant-based milk!
Flavors: Instead of vanilla extract, add hazelnut extract or cinnamon.
Serving Ideas
The brown sugar syrup isn't just for lattes!
Use in drinks: Add to iced coffee, hot coffee, matcha, lattes, hot chocolate, and tea.
Make a cocktail: Make a brown sugar cocktail by adding this syrup to a mixture of vodka, plant-based milk, and coffee liquor.
Use in oatmeal: Use it to sweeten overnight oats, oatmeal, or chia pudding.
Tips & Tricks
Don't overcook it! You don't want this to be a thick caramel-like consistency. It should be simmered until the sugar has melted, no more than 5 minutes.
Allow the syrup to cool completely at room temperature before using it for iced drinks. It can be immediately added to a hot drink but allowing it to cool before adding it over ice will prevent it from crystallizing.
Use an unsweetened oat milk so you can be completely in control of the sweetness.
Storage
Brown sugar syrup typically lasts up to 2 weeks when stored in an airtight container in the refrigerator.
