Ingredients
Roasted garlic is significantly milder than its raw counterpart making it an ideal choice for recipes to add a delicious garlicky flavor but without overshadowing the other ingredients.
You will only need 3 ingredients to make this quick and easy air fryer garlic!
Garlic: If possible, choose garlic heads that are similar sizes to ensure even cooking. I typically roast three at once, but feel free to adjust based on your preference.
Olive Oil: Just a drizzle to help caramelize and brown-- it also adds flavor!
Salt and Pepper: A must!

Helpful Equipment
To prepare this roasted garlic recipe, you'll need an air fryer. I use the Ninja AF150AMZ Air Fryer XL.
Please note that the outcome may vary depending on the brand of the air fryer, so you might need to roast it for a longer duration to achieve your desired result.
Once the exposed garlic cloves look caramelized and golden, it's ready!
If you don't have an air fryer, you can still prepare this roasted garlic by wrapping the cloves in foil and place in a 375F preheated oven for 40-50 minutes.
How to Make This Recipe
Roasting garlic in the air fryer cuts the time in half compared to the oven method. The result is a subtle sweetness and caramelized flavor.
The full written recipe can be found in the recipe card below.
Step 1: Slice off the top portion of the garlic head, keeping the cloves intact but revealing them slightly. Pour a drizzle of olive oil onto the exposed garlic cloves, then lightly sprinkle with a pinch of salt and black pepper.
Step 2: Wrap the whole garlic in foil. Preheat the air fryer to 400F for about 5 minutes. When it is preheated, add the foil wrapped heads of garlic.
Step 3: Air fry for 20-25 minutes or until caramelized and golden.
Let it cool then remove the cloves from the skin with a knife, tiny spoon, or squeeze the cloves out.
Note: The foil will be hot! Make sure to use oven mitts or tongs when removing them.
Substitutions & Variations
Without foil: You can air fry garlic without wrapping it in foil but note that this can cause the garlic to brown faster and even burn before completely caramelizing. For best results, wrap in foil.
Add herbs: Before roasting, drizzle the garlic cloves with olive oil and sprinkle them with herbs such as rosemary, thyme, or oregano for added flavor.
Add spice: Sprinkle the garlic cloves with red pepper flakes or cayenne pepper before roasting to give them a spicy kick.
In the oven: If you don't have an air fryer, you can still make this roasted garlic by wrapping the cloves in foil and placing them in a preheated oven at 375F for 40-50 minutes.
Serving Ideas
I think it would take less time to tell you the things not to spread this on-- seriously, this roasted garlic is perfect for all your favorite savory dishes!
Some of my favorites include:
Spreading on Toast: Mash roasted garlic cloves and spread it on toast. Make bruschetta or garlic bread!
Dips and Spreads: Incorporate it into hummus, white bean dip, or vegan aioli for added depth of flavor.
Salad Dressings: Blend roasted garlic with olive oil, lemon juice, and herbs to create a delicious vegan salad dressing. This is especially delicious, if you're sensitive to the pungent flavor of raw garlic.
Mashed Potatoes: Mix roasted garlic into mashed potatoes for a rich and savory twist.
Pasta Sauces: Stir roasted garlic into tomato sauce or vegan Alfredo sauce to enhance the flavor of your pasta dishes.
Soups and Stews: Add it to soups for an extra layer of flavor. My favorites are Lasagna Soup and Cauliflower Leek and Potato Soup.
Grain Bowls: Mix with cooked brown rice, quinoa, or farro for a flavorful base for grain bowls.
Pizza Toppings: Use roasted garlic cloves as a pizza topping along with other vegetables like peppers and onions.
Stir-Fries and Roasted Vegetables: Toss garlic with roasted or stir-fried vegetables for added flavor.
Tips & Tricks
Slice off the top of the garlic bulb to expose the cloves, but keep the bulb intact. Occasionally, there are smaller cloves nestled on the sides of the garlic bulb that may go unnoticed when you slice off the top.
Adjust timing as needed. Air fry the garlic for about 20-25 minutes. Check periodically to prevent burning. The garlic should be soft and caramelized when done. You can test by gently squeezing the cloves; they should feel soft.
Allow the roasted garlic to cool slightly before handling. Once cooled, squeeze the cloves out of their skins or use a small knife to remove them.
Use tongs or oven mitts to remove the garlic from the air fryer as it will be very hot!
Storage
Roasted garlic can be stored in an airtight container in the refrigerator for up to 5 days.
You can also freeze roasted garlic in a freezer-safe container to use at a later time. No need to thaw-- just throw them in whatever you're cooking.
